Coconut Macarons
INGREDIENTS
3 oz. - Cream Cheese
1 - Egg
1/3 Cup - Butter
1 tsp - Baking Powder
1/4 tsp - Salt
3/4 Cup - Granulated Sugar
2 tsp - Almond Extract
2 tsp - Orange Juice
1-1/4 Cups - White Flour
5 Cups - Sweetened Coconut Flakes
30 - Maraschino Cherries
DIRECTIONS
Beat butter, cream cheese, and sugar until smooth. Mix in egg yolk, almond extract, and orange juice. Gradually add flour, salt, baking powder, and 3 cups of the coconut. Cool for 1 hour, then form dough into small 1" balls and roll them into the egg white and the remaining coconut. Place balls onto a cookie sheet and bake at 350 degrees for 12 minutes. Remove from oven and press a cherry into the center of each cookie. Cool. Serve and enjoy.
