INGREDIENTS
1 Boxes - JELLO Cook & Serve Lemon Pudding
2-1/2 Cups - Water
1/2 Cup - Lemon Juice
1-1/4 Cups - Granulated Sugar
3 - Egg Yolks
1 - Store-bought Pie Crust
8 - Egg Whites
1/2 tsp - Cream of Tartar
DIRECTIONS
Combine pudding mix, 3/4 cup of the sugar, egg yolks, water, and lemon juice in a saucepan and cook over medium heat until mixture comes to a boil (whisk constantly). Pour into pie crust and let reach room temperature. Pour in refrigerator and cool for 3 hours. While pie is chilling, whip the egg whites in a bowl until they are glossy and smooth, then add the cream of tartar. Slowly add the remaining 1/2 cup of sugar to the egg whites about a tablespoon at a time, beating after each addition until the sugar is incorporated. Continue beating until stiff peaks form. Spread meringue on top of pie and bake at 350 degrees for about 10 minutes, until golden. Chill and serve.
