INGREDIENTS
1 lb. - Chicken Breast
4 Cups - Extra Wide Rice Noodles
1 1/2 Cups - Broccoli Florets
3 - Eggs
2 Cloves - Garlic
2 - Birds Eye Chili Peppers
2 Tbs. - Mushroom Flavored Dark Soy Sauce (Lee Kum Kee Brand)
3 Tbs. - Vegetable Oil
1 Tbs. - Fish Sauce (Red Boat Brand)
2 tsp - Oyster Sauce (Lee Kum Kee Brand)
1 tsp - Granulated Sugar
1/2 tsp - White Pepper
DIRECTIONS
The final cooking process takes only about 1 minute, so prepare all ingredients before beginning to cook anything.
If you are using dried rice noodles, place them in a pot of cold water and soak for 2 hours. If using pre-cooked, refrigerated rice noodles, soak them for 20 minutes. Drain the noodles and add to a pot of boiling water. For dry noodles, cook for roughly 5 minutes, drain and set aside. For pre-cooked noodles, cook for 20 seconds, drain and set aside.
Beat the eggs until combined and set aside. Put the broccoli in a bowl with 1 Tbs. of water and cover. Microwave for 2 minutes to blanch and set aside. For the sauce, combine sugar, pepper, fish sauce, soy sauce, and oyster sauce. Mix until combined and set aside. Mince the garlic and birds eye chilis, combine and set aside. Slice the chicken breast into very thin slices (roughly 1/8" thick) and set aside.
Once all ingredient prep is finished, heat the vegetable oil in a large wok or frying pan at medium high heat. Add in the garlic and chilis and stir for a few seconds. Immediately add the chicken and cook until the chicken begins to turn brown. Add the eggs on top of the chicken and cook for about 15 seconds. While most of the egg is still runny, add the rice noodles to the pan and gently toss everything together, coating the noodles in the egg. Pour the sauce on top and gently toss everything until noodles are coated. Add the broccoli, toss, and remove from heat. Serve immediately.
*Special Note - The specific brands of sauces listed in the recipe are vital to getting the correct flavor. A lot of trial and error went into this recipe. This recipe pairs perfectly with Dechen's Crab Wontons! For a faster version, you can substitute the noodles for standard spaghetti noodles, but it is less authentic.
